Menu Plan Monday

Happy Monday! I hope you all had a wonderful weekend, we certainly did and we managed to stay in town all weekend long, kind of! We had a lot on our schedule as it was the first weekend that didn't bring frosty temps to the Midwest. It was time to scrub down patio furniture after pulling it out of storage, put new sand in the patio cracks and fix any blocks that may look worse for wear. It was a nitty gritty kind of weekend and we were ready for it! The kids knew that they had to work hard if we were to be rewarded and the reward was a dessert party at the Drive-In movie theater to see The Jungle Book and Zootopia! We had already seen the latter but it was still such a good movie that we were ready to see it again! It was all phenomenal and we had a lot of fun! What did you do this weekend?
Now it's time for Menu Plan Monday! I found this spectacular Monday-Weekend pad of paper in the Dollar Spot at Target and figured it was much nicer than having to print something out or the more expensive pads out there! I LOVE IT! It fits right into my planner for grocery day too!
 
Monday: Spinach & Feta stuffed Chicken breasts with Green Beans and a garden salad. Served with Iced Black Tea.
 
Tuesday: Lettuce Wraps & Raw Veggie Platter with homemade hummus (portable for a cross country event and late night) served with Lemon Water infused overnight in waterbottles and strained in the morning.
 
Wednesday: Veggie Lasagna with a Caprese Salad & Iced Green Tea.
 
Thursday: Grilled Salmon and Squash served with a garden salad and Lemon Water

Friday: Couscous Chicken Soup with Homemade Dutch Oven bread

Saturday: Grilling and Bonfire Party

Sunday: Kids have a cross country race and then we will go out to dinner with family to celebrate afterwards.

Meal Plan Monday

My meal plan is running a bit late this week and has been missing for 2 weeks because I have just been going crazy with life. I'm lucky enough that I have content ready for blog posts that I can churn them out and schedule them to post, but my meal plans are done on shopping day and I just never have time to type them up but i'm working on it!

As I have shared before, I always know what I am cooking when I go grocery shopping, this keeps my shopping inexpensive and no impulse buys allowed (all that savings is vacation money!!) at any time. I create my menu based on ads from local places as well as what I have in the freezer, fridge, pantry and basement freezer and then online ads from Trader Joes and Whole Foods, as we don't have these in town.

The MINUTE the bags come into the kitchen, we begin our routine. The kids begin washing produce, putting away pantry supplies and I begin to chop and dice everything that needs to be put away. This keeps our produce from spoiling or going unnoticed. Leave a watermelon whole and it may go moldy, cut it up and suddenly it's everyone's favorite fruit! It's a chore, but it's well worth it to my bottom line. It also makes dinner so easy when I am just throwing it in the wok or in a crockpot. No chopping or dicing required! It also keeps your produce fresher for longer periods of time.

Monday- Beef Roast over cauliflower rice with fresh green beans
Salad- Romaine & Escarole with Tomato Slices and Lime juice

Tuesday- Loaded Baked Potato Soup
Salad- Spinach Southwest with Corn

Wednesday- Shrimp & Avocado Ceviche with Guacamole
Salad- Tomato & Cucumber slices with chile, salt & lime

Thursday- Chicken Gyros served in Lettuce Leaves instead of pita
Salad-Greek

Friday- Out to dinner with friends moving out of state :(
Saturday - Out to dinner for Valentine's Day

Sunday - Italian Wedding soup with homemade french bread
Salad- Traditional Garden Salad bar with choose your own dressing

Tuesday: Beef Roast with Cauliflower Mashed fauxtatoes & Lettuce Leaf Salad (1 leaf of lettuce with diced tomatoes, cucumbers, peppers, corn & vidalia onions on top)
Wednesday: Homemade Shrimp Wonton Soup with Chinese Chopped salad and lime juice
Thursday: Pork & Broccolini Stir fry served over Rice with Bow Tie & Spinach Salad
Friday: Turkey Taco Lettuce Wraps served with grape tomato and cucumber skewers 
Saturday: Homemade Ramen Soup served with Southwestern Chopped Salad
Sunday: Rosemary Chicken Breasts w/ Roasted Carrots & Green Beans & Cucumber/Onion Salad

Menu Plan Monday...

I have 20 minutes until midnight, it still counts as Monday then right?!
Monday: Chicken Pot Pie with a garden salad & fresh brewed mint tea
Tuesday: Veggie Burrito Bowls served with Cucumber Slices sprinkled with lime, salt & spice
Wednesday: Parmesan crusted Pork Chops with Mashed potatoes and Corn. Served with Ceasar Sald
Thursday: Lettuce Wrap Bar (veggie selection, laughing cow, chicken, shrimp) served w/ miso soup.
Friday: Out to eat for our weekend in Wisonsin, but left pizza coupons for our house sitter!

Monday's Musings and Menu Planning...


Oh Happy Day, it's Monday and all is going well. How have you been this weekend? I pray everyone had a safe holiday. We spent it on the road a lot, but still had fun and enjoyed ourselves, technically we are still on vacation for a couple more days!
Ten Things That Have My Mind Running Too Much:
~ It's December. I still have not finished my shopping.
~I would like to finish up the quarter but we seem to be taking it quite easy this time around
~Wondering what's for breakfast as my tummy is rumbling
~The calm of the morning has a way of making all the worries go away
~This green tea is too bitter and I don't want to brew anew.
~I need to get on a better workout plan, I make too many excuses.
~I really hate the book I am reading, but I am forcing myself to power through it.
~My husband is having oral surgery tomorrow and I hope he will be okay
~Dining out with people that are rude to the waitstaff really upset me and I have to sneak back to tip extra on the sly...
~As I drink my tea, working in our hotel room, I watch my children sleep and I remember that no matter what, these children are the best thing I have ever done.
Our Elf got crazy over the weekend and was found hanging from one of the war planes dangling from the ceiling in the boys room. The kids absolutely LOVE when Charlie is up to nothing but mischief but boy does it take a lot of planning to keep him on the run. Funny Story:
When my 8 hear old found him hanging there, he took his clothes and changed in his bathroom, when asked why, he said he didn't want Charlie seeing him naked! Hahahah!! I love how fiercely the believe. See what else Charlie has been up to in 2014!
We took the kids to see this fantastic light display in the town we are in and it all dances to music and there is so much to see. One window even has a television in it with Santa looking out at everyone. It is truly amazing. They are a Toys for Tots drop off and then give out Believe bells from the Polar Express. Due to this trip, our Menu plan is shorter this week!

- D - Shrimp Alfredo with Basil & Tomato Salad (Pasta is an easy dish in case we get home late)
Thursday: B- Cereal & Fruit
L- Pasta Salad with Veggie Sticks
D - Stuffed Chicken breasts and steamed carrots with garden salad
Friday: B- Diced Ham & Eggs with Melon Ball Salad
L - Turkey Rolls, Laughing Cow & Veggie Sticks with Pretzels
D - Sushi Night!
Saturday: B- Rainbow Pancakes with Sausage and Strawberries
L- Cheese & Crackers with Ham Rolls
D- Pork Roast with Green Beans and Chef Salad
Sunday: B- Breakfast Casserole with fresh squeezed juice and grapes
L- Out with friends
D- Spaghetti & Meatballs with Caprese Salad

Menu Plan Monday

Well it's technically still Monday! I know this is late, but I had to rant about the library earlier today! One comment I want to share about my menu planning is that whatever I prep for dinner, is what I have out that day for snacking and then I add a little of whatever fruit I have on hand as well. They get their fruit and veggie servings throughout the day and I don't have any produce go bad! Win-win! I also mentioned before that I wash and chop up all my produce the minute it comes into my house and that makes it easy to toss a salad or snack on healthy items 24-7! It also makes it easy to throw some containers in a cooler on our way out the door whenever we head out on an adventure!
Our Menu:
Monday- (B) Cereal with Kiwi Slices
(L) Leftover Chicken Soup with crackers
(D) Open faced black bean burgers with garden salad

Tuesday -(B) Pancakes & Strawberries
(L) DIY Wraps with snap peas & veggies
(D) Slow Cooker Chicken Marsala with Tomato & Basil Salad

Wednesday-(B) Fruit & Yogurt Parfaits with Granola
(L) Cheese & Crackers w/ Misc. Veggies
(D) Black Bean & Cilantro-Lime Rice Bowls with Garden Salad

Thursday-(B) Cereal with melon salad
(L) Egg Salad with Celery & Carrot sticks
(D) Spinach Stuffed Shells served with Italian Chopped Salad

Friday-(B) Diced Ham & Eggs with Orange Slices
(L) Turkey Lettuce Wraps with Pretzels and Grapes
(D) Pizza with Friends

Saturday - (B) Fruit Bar with Yogurt
(L) Sandwiches & Veggies with whole fruit on the go
(D) Green Pepper & Cheese Gorditas with Pico De Gallo

Sunday -(B) Waffles and Bananas
(L) Out with friends after Mass
(D) Parmesan and Herb breaded chicken strips with Spinach & Romaine Salad
